Grilled pesto and lemon chicken kabobs with veggies, made effortlessly in a Panasonic CIO.
Ingredients:
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1 cup pesto
  • 2 tablespoons fresh lemon juice
  • 12 cherry tomatoes
  • 12 red onion chunks
  • 6 wooden skewers, soaked in water for 20 minutes
  • salt and ground black pepper to taste
Instructions:
  • Place chicken pieces, pesto, and lemon juice in a large resealable plastic bag. Seal the bag and shake well to ensure everything is evenly coated. Refrigerate for 24 hours to let the flavors meld together.
  • Skewer chicken, tomatoes, and onion in a colorful pattern. Season generously with salt and pepper for bold flavors.
  • Preheat your Panasonic Countertop Induction Oven to Medium-High using the "Grill" setting.
  • Thread the skewers onto the grill pan and time for 3 minutes.
  • Cook the skewers for an additional 3 to 4 minutes until the chicken is fully cooked. Check for doneness with an instant-read thermometer; it should register 165°F (74°C) in the center of the chicken.
  • Let it rest for approximately 5 minutes.
