Grilled chicken with fresh basil pesto for an easy, tasty dinner.
Ingredients:
  • 800g chicken thigh fillets, trimmed, halved
  • 9.20 gm olive oil
  • 500.00 ml firmly packed fresh basil leaves
  • 62.50 ml pine nuts, toasted
  • 2 garlic cloves, peeled, quartered
  • 125.00 ml finely grated parmesan cheese
  • 75.08 gm olive oil
Instructions:
  • For basil pesto: Combine basil, pine nuts, garlic, and parmesan in a food processor. Pulse until roughly chopped. Add lemon juice and process until mixed. With the processor running, slowly pour in the oil until well combined. Transfer to a bowl, season with pepper, cover, and refrigerate until ready to use.
  • Preheat a barbecue plate or chargrill to medium heat. Brush chicken with oil, season with salt and pepper, and cook for 3 to 4 minutes on each side until fully cooked.
  • Spread a generous amount of flavorful pesto over the succulent chicken and present it beautifully for a delightful dining experience.
