Juicy pesto chicken meatballs - a delicious 4-ingredient dish perfect for any occasion. Serve with pesto or marinara sauce for a flavorful experience.
Ingredients:
  • 1 pound ground chicken, preferably dark meat
  • 2/3 cup panko breadcrumbs
  • 1/3 cup basil pesto, store-bought or homemade
  • 1 large egg
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • For serving: Additional basil pesto or warmed marinara sauce
Instructions:
  • Preheat the oven to 400°F, positioning the rack in the top third. Line a rimmed baking sheet with parchment paper.
  • Combine ground chicken, breadcrumbs, pesto, egg, salt, and pepper in a large bowl. Gently mix with a fork until evenly incorporated.
  • Shape the meat mixture into 20 meatballs, each about 1 1/2 inches in size. Arrange them evenly on the prepared baking sheet.
  • To cook the meatballs: Bake until golden brown and an instant-read thermometer inserted into the center reads 165°F, about 15 minutes. Broil briefly until the tops are golden-brown in spots, 3 to 5 minutes more. Serve with extra basil pesto or warm marinara sauce for dipping.
