Family favorite cheesy polenta with tomato sauce. Top with extra Parmesan. Leftovers are just as tasty!
Ingredients:
  • 2 cups milk
  • 2 cups chicken stock
  • 1 cup yellow cornmeal
  • 1 cup Parmesan cheese
  • 2 cups spaghetti sauce
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9-inch square baking dish.
  • In a large pot over medium-high heat, bring milk and chicken stock to a rolling boil. Gradually whisk in cornmeal until smooth. Reduce heat to low and simmer, stirring constantly, until thickened, about 5 minutes. Remove from heat and stir in Parmesan cheese.
  • Spread spaghetti sauce over the polenta in the prepared baking dish.
  • Bake until the sauce is bubbling in the preheated oven, approximately 10 minutes.
