Indulgent beef and tomato lasagna with creamy polenta chips and goat cheese, ready in 30 minutes using convenient Coles cheese sauce.
Ingredients:
  • 3 x 200g packets Goats Cheese Polenta Chips
  • 18.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 250g lean beef mince
  • 90g (1/3 cup) pizza sauce
  • 20.00 ml chopped fresh continental parsley, plus extra to serve
  • 425g tub cheese sauce
  • 100g (1 cup) grated mozzarella
Instructions:
  • Preheat your oven to 220C (200C fan forced) and generously grease a 1.5L-capacity baking dish measuring 6cm deep and 14cm x 19cm at the base.
  • Bake polenta chips according to package directions.
  • Heat oil in a medium frying pan over medium high heat. Cook onion for 3-4 minutes until softened. Add mince and brown for 4-5 minutes while breaking it up with a wooden spoon. Mix in pizza sauce and stir well. Pour in 1/3 cup water and simmer until thickened. Season, then remove from heat and mix in parsley.
  • Microwave cheese sauce according to packet’s instructions.
  • 1. Preheat your grill to high heat. 2. Spread half of the polenta chips in the baking dish. 3. Layer with the mince mixture, 1/4 cup of cheese sauce, 1/4 cup of mozzarella, and the rest of the polenta chips. 4. Pour the remaining cheese sauce over the top and spread it evenly. 5. Sprinkle the remaining mozzarella on top and grill for 2-3 minutes until golden and bubbly. 6. Let it rest for 5 minutes before serving, garnished with extra parsley. 7.
