Indulge in creamy buttery polenta as a tasty mashed potato alternative.
Ingredients:
  • 150g pepperoni, cut into 1cm pieces
  • 625ml (2 1/2 cups) chicken style liquid stock
  • 500ml (2 cups) water
  • 170g (1 cup) polenta (cornmeal)
  • 40g (1/2 cup) finely grated parmesan
  • 20g butter, chopped
Instructions:
  • Preheat a non-stick pan over medium heat. Cook the pepperoni, stirring occasionally, until crispy, about 5 minutes.
  • In a saucepan over medium-high heat, combine the stock and water. Bring to a simmer. Slowly pour in the polenta while whisking continuously with a balloon whisk until well combined. Lower the heat to low and cook, stirring constantly, for 25 minutes until the polenta thickens and becomes soft.
  • Combine the parmesan, butter, and two-thirds of the pepperoni with the polenta. Stir well and transfer to a bowl. Sprinkle the remaining pepperoni on top. Serve alongside spezzatino di manzo and spinaci alla romana.
