Quick and versatile 30-minute polenta, perfect for any meal.
Ingredients:
  • 1 cup yellow cornmeal
  • 3/4 cup water
  • 3 1/4 cups boiling water
  • 1 1/2 teaspoons salt
Instructions:
  • In a 2-quart saucepan, combine cornmeal and 3/4 cup of water. Stir in 3 1/4 cups of boiling water and salt. Cook over low heat, stirring constantly, until thickened and boiling. Reduce heat.
  • Simmer covered for about 10 minutes until thickened, stirring occasionally. Remove from heat and stir until smooth.
