Try this simple and vibrant Asian pork fried rice for a quick and delicious dinner.
Ingredients:
  • 1 tablespoon vegetable oil
  • 8 medium green onions, sliced (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1 1/2 cups water
  • 1 cup frozen mixed vegetables
  • 2 cups uncooked instant rice
  • 1 barbecued pork tenderloin, cooked and cubed
Instructions:
  • In a 10-inch skillet, heat oil over medium-high heat. Saute onions and garlic for about 2 minutes, stirring occasionally, until onions are crisp-tender.
  • Combine water, barbecue sauce, soy sauce, and vegetables in a saucepan and bring to a boil. Remove from heat, then gently stir in rice and pork. Cover and allow to sit for about 5 minutes until the liquid is absorbed.
