Velvety potato and leek soup made with creamy chicken broth.
Ingredients:
  • 6 potatoes, peeled and cubed
  • 1 (14.5 ounce) can chicken broth
  • 2 leeks, chopped
  • 2 teaspoons margarine
  • 1.5 cups heavy whipping cream
Instructions:
  • In a medium pot over medium heat, gently simmer the potatoes in broth for 20 minutes until they are tender.
  • In a skillet over medium heat, cook the leeks in butter or margarine until tender, about 5 to 10 minutes. Combine the sauteed leeks and cream with the potatoes, stir well, and slightly thicken the soup using a potato masher if desired.
