Sweet potato and leek soup

Ingredients:
  • 2 leeks, finely sliced
  • 2 garlic cloves, chopped
  • 2 sweet potatoes, cut into small cubes
  • 1 red chilli, deseeded and chopped
  • 480.00 gm low salt chicken stcok
  • 165.00 ml light evaporated milk
  • 82.50 ml coriander leaves, freshly chopped
Instructions:
  • In a sturdy saucepan over medium heat, heat oil until shimmering. Add leeks and garlic; sauté until leeks are soft. Stir in sweet potato and chili; cook for 5 minutes, stirring occasionally.
  • Pour in the stock and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • Gently mix in the evaporated milk and simmer on low to thicken the soup. Puree until velvety, then garnish with fresh coriander leaves and serve.
