Leek & sweet potato soup

Cozy up with a delicious leek soup for a quick and comforting winter meal.
Ingredients:
  • 36.40 gm olive oil
  • 900g leek
  • 1 brown onion, finely chopped
  • 700g orange sweet potato (kumara, peeled, cut into small cubes
  • 1.25L (5 cups) chicken style liquid stock
  • Salt & ground black pepper, to taste
  • Chopped fresh chives to garnish
Instructions:
  • In a large saucepan, melt the butter with olive oil over medium heat.
  • Sauté the leeks and onion until soft, then mix in the sweet potato and cook for an additional 10 minutes, stirring often. Pour in the chicken stock, cover, and bring to a boil.
  • Simmer over low heat for 25 minutes until the sweet potato is tender. Season with salt and pepper, then let it cool for 5 minutes off the heat.
  • Puree the soup in two batches in a food processor or blender until velvety smooth. Transfer the soup to a clean saucepan, warm over medium-low heat, adjust seasoning if needed, and serve topped with fresh chives.
