Creamy leek and potato soup with a touch of curry, elevated with sweet shrimp.
Ingredients:
  • 0.25 cup butter
  • 2 medium leeks, chopped
  • 1 large onion, chopped
  • 1 (32 ounce) carton Swanson® Chicken Broth
  • 3 medium russet potatoes, peeled and cut into 1/2-inch dice
  • 1 teaspoon curry powder
  • salt and pepper to taste
  • 1 cup milk
  • 1 pound cooked shrimp, peeled, diced
Instructions:
  • In a large pot over medium heat, melt the butter until sizzling. Add the chopped leeks and onions, and cook gently until they are soft and fragrant, which should take about 5 to 7 minutes.
  • Combine Swanson® Chicken Broth with potatoes in a pot. Season generously with curry powder, salt, and pepper. Bring to a boil, then simmer on low for 20 minutes.
  • Pour in the milk and then gently introduce the shrimp. Heat the soup until it just begins to simmer once more.
