Indulge in decadent pumpkin cheesecake bars on a nutty homemade crust.
Ingredients:
  • 1 cup all-purpose flour
  • 0.33333334326744 cup packed brown sugar
  • 5 tablespoons butter, softened
  • 0.5 cup finely chopped pecans
  • 1 (8 ounce) package cream cheese
  • 0.75 cup white sugar
  • 0.5 cup pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground allspice
  • 1.5 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease an 8-inch square baking dish.
  • Combine the flour and brown sugar in a bowl. Incorporate the butter into the flour mixture until it forms small crumbs. Gently fold in the pecans. Reserve 3/4 cup of the mixture for the topping, then press the rest into the bottom of the baking dish.
  • Bake the crust in a preheated oven until lightly browned, around 15 minutes. Remove from the oven and let it cool slightly.
  • In a bowl, combine cream cheese, white sugar, pumpkin puree, eggs, vanilla extract, allspice, and cinnamon until smooth. Pour mixture over the cooled crust and sprinkle reserved topping on top.
  • Bake the dish until the topping turns golden brown, for 30 to 35 minutes.
