Elevate your holiday cookie tray or surprise a Santa collector with these irresistible cookies!
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 teaspoon grated lemon peel
  • 1 egg
  • 2 tablespoons milk
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup plus 2 tablespoons from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 3 tablespoons red sugar
  • 18 miniature marshmallows
  • 36 currants or semisweet chocolate chips
  • 18 red cinnamon candies
  • 3/4 cup shredded coconut
Instructions:
  • Preheat oven to 400°F. Using an electric mixer or a spoon, combine butter, granulated sugar, and lemon peel until smooth. Mix in egg and milk, then add flour, baking powder, baking soda, and salt.
  • Scoop dough onto ungreased cookie sheet, spacing them 3 inches apart. Flatten each with a drinking glass to 1/4 inch thickness and 3 inches in diameter. Bake for 8 to 10 minutes until lightly golden. Transfer to wire rack right away and let cool completely for about 30 minutes.
  • Frost each cookie and decorate as follows: - Sprinkle red sugar over the top third for the hat. - Press on a miniature marshmallow as the tassel. - Add 2 currants for the eyes and 1 cinnamon candy for the nose in the center third. - Sprinkle coconut over the bottom third for the beard.
