Flavorful shepherd's pie with garlicky Romano mashed potatoes - a crowd-pleasing family favorite.
Ingredients:
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried basil
  • 2 (15 ounce) cans mixed vegetables, drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (8 ounce) can tomato sauce
  • 2 pounds red potatoes
  • 0.5 cup butter
  • 0.5 cup grated Romano cheese
  • 0.33333334326744 cup milk
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
Instructions:
  • Preheat the oven to a piping hot 375 degrees F (190 degrees C) and lightly grease a medium baking dish.
  • In a large skillet over medium heat, cook beef and onion seasoned with rosemary and basil until the beef is browned; drain grease. Stir in mixed vegetables, diced tomatoes, and tomato sauce, and cook until vegetables are heated through. Transfer mixture to the prepared baking dish.
  • In a large pot, cover the potatoes with water and bring to a boil. Let them cook until tender, approximately 10 minutes. Drain the potatoes after removing from heat.
  • Combine butter, Romano cheese, milk, garlic, salt, and oregano with the potatoes in the pot and mash until smooth. Spread the creamy mashed potatoes evenly over the beef and vegetable mixture in the baking dish.
  • Bake in the preheated oven for 30 minutes, then broil on high until the potatoes are golden brown on top, about 3 minutes.
