Loaded Shepherd's Pie recipe with a hearty mix of veggies, perfect for the family.
Ingredients:
  • 1 brown onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 tsp fresh rosemary leaves, finely chopped
  • 500g lamb mince
  • 40.00 ml White Plain Flour
  • 24.40 gm worcestershire sauce
  • 44.40 gm tomato paste
  • 510.00 gm beef stock
  • 800g cream delight potatoes, peeled, chopped
  • 128.75 gm milk
  • 50g butter
Instructions:
  • In a hot frying pan, sauté onion, garlic, carrot, and celery until softened, around 10 minutes. Stir in rosemary and cook until fragrant. Increase heat, add mince, and cook for 6 to 8 minutes until nicely browned, stirring with a wooden spoon to break it up.
  • Sprinkle in the flour and cook while stirring for 2 minutes. Stir in the Worcestershire sauce and paste and cook for an additional minute. Pour in the stock, bring to a boil, then reduce heat to low. Let simmer for 25 to 30 minutes until thickened, stirring occasionally. Season to perfection with salt and pepper.
  • While waiting, place the potato in a large saucepan and cover it with cold water. Bring it to a boil over high heat and cook for 10 to 12 minutes until tender. Drain the potato and return it to the pan over low heat. Add milk and 25g butter, then mash until smooth.
  • Preheat the oven to 200C/180C fan-forced. Spread mince mixture in a large baking dish. Cover with mash using a fork to create an even layer. Dot with remaining 25g butter. Bake for 20 minutes until golden brown. Serve hot.
