American-style Shepherd's Pie: Savory ground beef and veggies topped with creamy mashed potatoes, baked to perfection.
Ingredients:
  • 1 1/2 to 2 pounds potatoes (about 3 large potatoes), peeled and quartered
  • 8 Tablespoons (1 stick) butter
  • 1 medium onion, chopped (about 1 1/2 cups)
  • 1-2 cups vegetables—diced carrots, corn, peas
  • 1 1/2 lbs ground round beef
  • 1/2 cup beef broth
  • Salt, pepper, other seasonings of choice
Instructions:
  • Cook the potatoes: In a medium pot, submerge the peeled and quartered potatoes in cold water. Sprinkle with a teaspoon of salt. Bring to a boil, then simmer until tender, about 20 minutes.
  • Preheat the oven to 400 degrees Fahrenheit for a perfect bake.
  • Saute the vegetables: In a large sauté pan over medium heat, melt 4 tablespoons of butter. Add chopped onions and cook until tender, about 6 to 10 minutes. For other vegetables, adjust cooking time accordingly. Carrots should start cooking with the onions, while peas or corn can be added towards the end of onion cooking or after the meat starts cooking due to their shorter cooking time.
  • Combine ground beef with Worcestershire sauce & broth: Cook ground beef with onions and veggies until no longer pink. Drain excess fat if over 1 tablespoon. Season with salt and pepper. Add Worcestershire sauce and beef broth, simmer on low for 10 minutes. Adjust seasoning to taste with salt, pepper, Worcestershire, or other spices.
  • Mash the cooked potatoes: Once the potatoes are fork-tender, transfer them to a bowl with the remaining 4 tablespoons of butter. Use a fork or potato masher to mash until smooth. Season with salt and pepper to taste.
  • Create a delicious meat and potato casserole: Smooth out the cooked filling in a large baking dish. Top it with a layer of mashed potatoes and use a fork to create decorative peaks on the surface for a golden finish.
  • To bake, cook in a 400°F oven until browned and bubbling, approximately 30 minutes. Consider broiling briefly at the end for a golden mashed potato topping.
