Delicious steak tacos featuring grilled flank steak on tortillas with avocado, pickled onions, lettuce, and cabbage.
Ingredients:
  • 1 (3/4 pound) flank steak, trimmed
  • 0.5 teaspoon freshly ground black pepper
  • Cooking spray
  • 1 tablespoon fresh lime juice
  • 0.5 tablespoon olive oil
  • 2 cloves garlic, minced
  • 6 (6 inch) corn tortillas
  • Grilled scallions for garnish
  • 1 cup chopped romaine lettuce
  • 1 cup chopped red cabbage
  • 1 Avocado from Mexico, sliced
  • 1 (16 ounce) jar pickled red onions
Instructions:
  • Press pepper onto steak to enhance flavor and ensure even coating.
  • Preheat the grill pan over medium-high heat and spray with cooking spray. Grill the steak for 6 minutes on each side to your preferred doneness. Let the steak rest on a cutting board for 5 minutes before slicing.
  • Slice the steak thinly at a diagonal angle against the grain. Combine lime juice, olive oil, and garlic, then pour over the steak. Sprinkle with salt for extra flavor.
  • Grill tortillas on a greased grill pan for 20 seconds per side, or until they have a light char.
  • Grill scallions until they are lightly charred for maximum flavor.
  • Place the steak evenly on the tortillas, then layer on the romaine, red cabbage, avocado, and pickled red onions. Finish off with a flavorful touch of grilled scallion on top.
