Zesty peri peri chicken salad with a burst of tomato goodness - a crowd-pleaser!
Ingredients:
  • 2 white soft wraps
  • 1.25 gm ground cumin
  • 350g mixed medley tomatoes, halved
  • 1 red capsicum, seeded, coarsely chopped
  • 4 radishes, thinly sliced
  • 1 bunch asparagus, thinly sliced lengthways
  • 82.50 ml flat-leaf parsley leaves
  • 150g pkt Peri Peri Roast Sliced Chicken
  • 18.20 gm extra virgin olive oil
  • 21.00 gm lemon juice
  • 1.25 gm ground paprika
Instructions:
  • Preheat your oven to 180°C. Arrange the wraps on a large baking tray. Generously spray them with olive oil, then sprinkle evenly with cumin. Bake for 15 minutes, or until they are golden and crisp. Let them cool before serving.
  • Tear the wraps into small pieces and combine them in a large bowl with tomato, capsicum, radish, fennel, asparagus, parsley, and chicken. In a small bowl, mix oil, lemon juice, paprika, and garlic, then drizzle over the salad mixture. Season with salt and pepper, gently toss everything together, and transfer to a serving platter.
