Fire-roasted tomato and beet soup with a rich beef broth base - ready in under an hour!
Ingredients:
  • 2 (14.5 ounce) cans fire-roasted diced tomatoes, drained
  • 1 (15 ounce) can whole beets, drained
  • 1 (6 ounce) can tomato paste
  • 26 ounces beef stock, divided
  • 1 tablespoon white sugar, or more to taste
  • 0.5 teaspoon dried dill weed
  • 3 drops hot pepper sauce, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • Blend together fresh tomatoes, vibrant beets, rich tomato paste, and 1/2 cup of savory beef stock until velvety smooth.
  • Combine the tomato mixture with the remaining beef stock in a saucepan, then mix in sugar, dill, hot pepper sauce, salt, and pepper.
  • Simmer the soup gently on medium-low heat for about 30 minutes to allow the flavors to blend perfectly.
