Easy Tomato Cobbler

Buttery onions and sweet cherry tomatoes baked in flaky biscuits make a delightful side dish.
Ingredients:
  • 3 lb cherry tomatoes
  • 1/4 cup butter, melted
  • 1 medium onion, sliced
  • 1 clove garlic, thinly sliced
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons Original Bisquick™ mix
  • 1/3 cup milk
  • 1 egg beaten with 1 tablespoon water
Instructions:
  • Preheat oven to 375°F.
  • Cut larger tomatoes into halves or quarters to ensure uniformity in size. Combine the tomatoes, melted butter, onion, garlic, flour, Italian seasoning, and salt in a large bowl. Transfer the mixture to an ungreased 2-quart baking dish.
  • Roast for approximately 30 minutes or until tomatoes are tender and start to burst.
  • Combine Bisquick mix and milk in a small bowl. Spoon the mixture on top of the tomatoes and lightly brush with the egg mixture.
  • Bake until biscuits are a beautiful golden brown, typically for 15 to 20 minutes.
