Quick and easy tortilla soup with crispy toppings for a satisfying meal.
Ingredients:
  • 3 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
  • Cooking spray
  • 1 large red onion, chopped (1 cup)
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 cups chopped deli rotisserie chicken (from 2-lb chicken)
  • 1/4 cup chopped fresh cilantro
  • 1 medium avocado, pitted, peeled and diced
  • 1 lime, cut into fourths
  • 1/2 cup sour cream
Instructions:
  • Preheat oven to 400°F. Slice tortillas into 1/2-inch strips and arrange on a baking sheet. Lightly coat the strips with cooking spray. Bake for 5 to 6 minutes until crispy and golden brown. Let cool before using.
  • In a 3-quart nonstick saucepan, sauté the onion over medium heat for 2 to 3 minutes until soft. Stir in enchilada sauce and chicken broth, then bring to a simmer. Add the chicken and continue to simmer until the onion is cooked through. Remove from heat and stir in cilantro. Serve with tortilla strips and your favorite garnishes.
