Valentine's Day sandwich cookies with heart cutout and pink frosting.
Ingredients:
  • 1 cup butter
  • 1.5 cups confectioners' sugar
  • 1 large egg
  • 0.5 teaspoon almond extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon cream of tartar
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • In a large bowl, combine butter and confectioners' sugar until creamy. Mix in egg, vanilla, and almond extract.
  • In a medium bowl, whisk together the flour, baking soda, and cream of tartar. Add this mixture to the butter and beat until just combined. Divide the dough into three equal parts and shape each into a ball.
  • Roll out the dough to 1/4-inch thickness on a floured surface. Cut out two 3-inch hearts for each sandwich cookie. Use a 1 1/2-inch cutter to cut out the center of one heart. Place cutout pieces on an ungreased cookie sheet, leaving 1 to 2 inches between each. Repeat with the remaining dough.
  • Bake in the oven until lightly browned, about 7 to 8 minutes. Let cool completely on wire racks.
  • Cover each 3-inch cookie with Pink Valentine Frosting and add another cookie on top to create a delightful sandwich. Frost the rest of the small hearts individually and serve as single cookies.
