Quick and delicious lunchtime quesadillas.
Ingredients:
  • 150g chicken, cooked and chopped
  • 1 capsicum, chargrilled, skin removed, thinly sliced
  • 40.00 ml sun-dried tomatoes, thinly sliced
  • 20.00 ml fresh oregano leaves, roughly chopped
  • 50g feta, crumbled
  • 125.00 ml grated cheddar
  • 4 yirros bread rounds
Instructions:
  • Combine chicken, capsicum, tomato, oregano, feta, and cheddar in a bowl.
  • Preheat the sandwich press. Lay 2 bread rounds on a flat surface. Spread chicken mixture evenly between the rounds. Add remaining bread rounds on top. Toast in the press for 2 to 3 minutes until the cheese has melted and the filling is warm. Cut into quarters and serve.
