Effortlessly transform chicken with vibrant Greek flavors in an easy, one-dish bake for minimal cleanup.
Ingredients:
  • 27.30 gm olive oil
  • 30.00 ml chopped fresh oregano leaves
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 1kg chicken thigh
  • 3 large zucchini, halved lengthways, cut into 3cm pieces
  • 2 small red capsicums, chopped
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Mix together oil, oregano, lemon zest, and 1 tablespoon of lemon juice in a large baking dish. Add chicken, toss to coat well, and season with salt. Bake for 20 minutes until golden and cooked through.
  • In a baking dish, layer the zucchini and capsicum. Bake for 20 minutes or until the chicken is cooked through and the vegetables are tender. Drizzle the remaining lemon juice over the dish, gently toss to mix everything together, and serve.
