Satisfying vegetarian casserole with tomatoes, Parmesan, creamy sour cream, and eggs. Enjoy as a versatile side dish or a delicious meatless main course with a crisp salad.
Ingredients:
  • 0.25 cup butter
  • 0.33333334326744 cup onion, chopped
  • 2 tablespoons finely chopped flat-leaf parsley
  • 1.75 pounds tomatoes, sliced
  • salt to taste
  • 1.25 cups grated Parmesan cheese, divided
  • 9 ounces sour cream
  • 2 eggs
Instructions:
  • In a skillet over gentle heat, melt butter until fragrant. Sauté onion and parsley until tender, approximately 5 minutes.
  • Preheat the oven to 350°F (175°C) and generously grease a casserole dish with butter.
  • Arrange a single layer of tomato slices in the casserole dish and sprinkle with salt. Add half of the onion mixture and half of the Parmesan cheese on top. Create another layer of tomato slices, season with salt, and top with the rest of the onions. Finish off with the final layer of tomatoes and season with salt.
  • Combine sour cream, eggs, and salt, then generously spread over the tomatoes. Finish by sprinkling the remaining Parmesan cheese on top.
  • Bake in the oven until golden brown and set, approximately 30 minutes.
