Delicious pasta primavera with zucchini, squash, tomatoes, and peas. Customize with your favorite veggies. Great for family dinners.
Ingredients:
  • 8 ounces penne pasta
  • 3 tablespoons Country Crock® Spread, divided
  • 2 medium shallots, sliced
  • 2 cloves garlic, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup yellow squash, sliced
  • 1 cup frozen peas
  • 0.5 cup chicken or vegetable broth
  • 1 tablespoon chopped fresh mint or basil
  • 0.5 teaspoon lemon zest
  • Grated Parmesan cheese
Instructions:
  • Prepare the pasta as instructed on the package.
  • In a large nonstick skillet over medium heat, melt 2 tablespoons of Country Crock® Spread. Sauté shallots until tender, about 3 minutes, then add garlic and cook for 1 minute more.
  • Sauté vegetables for 3 minutes, stirring occasionally. Pour in broth and simmer for 5 minutes until vegetables are tender. Finish by adding the remaining tablespoon of Country Crock® Spread.
  • Combine the vegetable mixture with the cooked pasta, fresh mint or basil, and lemon zest. Top with Parmesan cheese, if desired.
