Healthy veggie mac & cheese with a rich, creamy sauce.
Ingredients:
  • 350g macaroni
  • 1 bunch asparagus, halved lengthways and cut into 3cm lengths
  • 150g pea
  • 250g tub spreadable fat reduced cream cheese
  • 100g 97 per cent fat-free ham, shredded
  • 40.00 ml chopped chives
Instructions:
  • Boil the macaroni in a large pan of water following the package directions until it's al dente.
  • Bring a small saucepan of water to a boil. Add the asparagus and peas and cook for 1 minute once boiling.
  • After draining the asparagus and peas, set them aside. Return the drained pasta to the pan and immediately stir in the cream cheese until melted and well combined.
  • Combine the asparagus, peas, ham, and chives with the pasta. Gently mix until everything is well incorporated, then season to your liking. Serve right away for the best taste.
