Fluffy macaroni cheese souffle with golden crumb, a delightful entree or light meal.
Ingredients:
  • 250g macaroni pasta
  • 375ml can Light & Creamy Evaporated Milk
  • 127.50 gm salt reduced chicken style liquid stock
  • 2 eggs, separated
  • 4 green onions, thinly sliced
  • 250.00 ml low-fat grated cheese
  • 62.50 ml fresh multi-grain breadcrumbs
  • olive oil cooking spray
Instructions:
  • Preheat your oven to 200°C and lightly grease a 6-cup ovenproof dish.
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Drain and set aside.
  • In a saucepan over medium heat, combine milk, stock, and egg yolks. Stir and cook for 5 minutes until the sauce begins to boil. Add pasta, onions, cheese, and pepper, and mix together thoroughly.
  • Whip egg whites until soft peaks form. Gently incorporate into pasta mixture. Transfer to prepared dish. Top with breadcrumbs and a light mist of oil. Bake until golden brown, approximately 20 minutes. Enjoy!
