Easy white chicken enchiladas made with pantry staples - just measure and bake!
Ingredients:
  • 4 ounces cream cheese, softened
  • 0.5 cup sour cream
  • 0.5 cup green salsa
  • 2 (6 ounce) packages seasoned cooked chicken cubes
  • 1 cup shredded Mexican-style cheese blend
  • 1.5 cups white cheese sauce, or queso dip
  • 6 (8 inch) flour tortillas
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) while lightly coating an 8x8-inch glass baking dish with cooking spray.
  • Combine softened cream cheese, sour cream, and salsa until well mixed. Gently mix in chicken and shredded cheese. Spread a thin layer of white cheese sauce on the bottom of the baking dish. Fill each tortilla with the mixture, roll into tight cylinders, and place in the baking dish. Pour the rest of the sauce on top before baking.
  • Bake in a hot oven until golden and bubbly for approximately 30 minutes. Rest for 5 minutes before serving.
