Satisfying white chicken chili with tender chicken, white beans, chiles, and oregano for a comforting one-pot meal.
Ingredients:
  • 1 tablespoon olive oil
  • 3 skinless, boneless chicken breast halves
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 5.25 cups chicken broth
  • 3 (15 ounce) cans cannellini (white kidney) beans, rinsed and drained
  • 2 (4 ounce) cans chopped green chiles
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 2 pinches cayenne pepper, or to taste
  • 0.25 cup chopped fresh cilantro, or to taste
  • 0.5 cup shredded Monterey Jack cheese, or to taste
  • salt to taste
Instructions:
  • Start by warming up the olive oil in a Dutch oven over medium heat. Sear the chicken, onion, and garlic in the fragrant oil until the chicken is beautifully browned on both sides, which will take about 5 minutes.
  • Place the chicken on a cutting board and dice into 1-inch pieces.
  • Add the chicken pieces back to the Dutch oven and combine with chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper. Simmer until the chicken is fully cooked, which should take 30 to 40 minutes.
  • In each of the 4 bowls, sprinkle cilantro evenly. Pour chili over the cilantro and sprinkle cheese on top.
  • Sprinkle with a pinch of salt before serving.
