Delicious zucchini crab cakes with seafood seasoning and crispy bread crumb crust.
Ingredients:
  • 2 cups shredded zucchini, squeezed dry
  • 1.25 cups seasoned bread crumbs, divided
  • 1 small onion, chopped
  • 2 large eggs, beaten
  • 1 tablespoon butter, melted
  • 1 tablespoon chopped fresh parsley
  • 2 teaspoons seafood seasoning (such as Old Bay®)
  • 2 tablespoons vegetable oil, or as needed
Instructions:
  • Mix together zucchini, 1 cup of bread crumbs, onion, eggs, butter, parsley, and seafood seasoning in a bowl until thoroughly combined.
  • Shape mixture into 4 round cakes. Coat both sides of the cakes with remaining bread crumbs and place on a sheet of waxed paper. Chill in the refrigerator for 30 minutes.
  • In a large skillet over medium heat, heat oil. Fry chilled zucchini cakes for 7 to 8 minutes per side, or until browned. Drain on paper towels and serve.
