Spicy Buffalo shrimp: Crispy fried shrimp tossed in zesty sauce - perfect party appetizer!
Ingredients:
  • cooking spray
  • 2 (16 ounce) packages frozen shrimp (41 to 60 per pound) - thawed, peeled, and tails left on
  • 4 cups all-purpose flour
  • 0.5 cup Italian bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon cornstarch
  • canola oil for frying
  • 1 cup buttery spread (such as Smart Balance®)
  • 0.5 cup cayenne pepper sauce (such as Frank's® RedHot®), or to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon corn syrup, or to taste
Instructions:
  • Prepare 2 baking sheets by lightly greasing them with cooking spray.
  • Using a sharp knife, gently make an incision along the back of each shrimp and slightly open them. Submerge the shrimp in a large bowl of cold water.
  • In a large bowl, beat eggs until smooth. Drain shrimp and mix with eggs using your hands until well coated.
  • Combine flour, bread crumbs, salt, pepper, and cornstarch in a large bowl. Coat shrimp in flour mixture, ensuring to cover each shrimp entirely, including the opening at the back. Arrange the battered shrimp on baking sheets.
  • Refrigerate shrimp until batter is firm, approximately 30 minutes.
  • Begin by warming up the oil in a deep-fryer or large saucepan.
  • Fry shrimp in batches until golden brown, around 4 to 5 minutes per batch. Test one to ensure it's cooked through, then transfer to a paper towel-lined bowl to drain.
  • In a saucepan over medium-low heat, melt the buttery spread with cayenne pepper sauce and garlic powder until combined. Stir in the corn syrup until well incorporated.
  • Place the shrimp into individual serving bowls and generously coat them with the delicious sauce until each shrimp is fully immersed.
