Fast Ed's award-winning cornbread made with only 8 ingredients.
Ingredients:
  • 2 eggs, beaten
  • 300.00 gm fine polenta
  • 187.50 ml plain flour
  • 4.80 gm fine salt
  • 5.00 gm caster sugar
  • 125ml (1/2 cup) vegetable oil
  • 600ml buttermilk
Instructions:
  • Preheat your oven to 180C/160C fan forced and prepare 2 medium loaf pans by lining them with baking paper.
  • Combine the polenta, flour, baking powder, and salt in a large bowl. Add the sugar, oil, buttermilk, and eggs. Mix until the batter is smooth.
  • Transfer the creamy polenta mixture into the loaf pans and let it rest for 15 minutes.
  • Bake until golden and firm to touch, about 40-45 minutes.
