Experience the magic of this iconic Australian damper recipe!
Ingredients:
  • 450.00 gm self-raising flour
  • 10.00 gm caster sugar
  • 80g butter, chilled, chopped
  • 257.50 gm milk
  • Extra milk, for brushing
  • Extra flour, for dusting
  • Extra golden syrup, to drizzle (optional)
  • 80g butter, softened
  • 53.60 gm golden syrup
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line a baking tray with paper. Combine flour and sugar in a bowl, then add butter. Blend butter into the mixture until it resembles fine breadcrumbs.
  • Create a hollow in the center of the dry ingredients. Pour in the milk. Use a flat-bladed knife to mix until a dough forms. Transfer the mixture onto a lightly floured surface. Knead gently until the dough is smooth. Shape it into a 15cm round and place it on the prepared tray.
  • With a sharp knife, make a shallow cross on top of the damper. Brush with milk and lightly dust with flour. Bake for 35 minutes or until the damper is golden and makes a hollow sound when tapped on top. Cool on a wire rack.
  • Prepare golden syrup butter by blending butter and golden syrup until velvety using an electric mixer. Enjoy damper warm topped with the delectable golden syrup butter and an extra drizzle of golden syrup (if desired).
