Cheesy garlic damper pull-apart with bacon chilli jam

Cheesy Aussie damper with bacon chili jam - a guaranteed crowd pleaser!
Ingredients:
  • 6 damper rolls
  • 60g butter, softened
  • 2.00 garlic clove, crushed
  • 250.00 ml pizza cheese
  • Fresh flat-leaf parsley leaves, to garnish
  • Thyme sprigs, to garnish
  • 18.20 gm extra virgin olive oil
  • 400g middle bacon rashers, trimmed, cut into 1cm pieces
  • 1 small brown onion, finely chopped
  • 59.40 gm brown sugar
  • 54.00 gm maple syrup
  • 40.00 ml malt vinegar
  • 1/2 tsp dried chilli flakes
Instructions:
  • In a large frying pan over medium-high heat, sizzle the bacon in oil until perfectly crisp, stirring occasionally for about 10 minutes. Remove the bacon with a slotted spoon onto a plate lined with paper towel to soak up any excess oil.
  • In the same pan over medium heat, add the onion and cook, stirring occasionally, for 8 to 10 minutes until it turns golden. Add back the bacon, garlic, sugar, maple syrup, vinegar, and chili to the pan. Reduce the heat to medium-low and continue to cook, stirring occasionally, for another 8 to 10 minutes or until the mixture thickens. Let it cool for 15 minutes before serving.
  • Preheat your oven to 220°C/200°C fan-forced, then generously grease a 4cm-deep, 21cm round (base), 29cm (top) frying pan.
  • Slice each damper roll 2 times horizontally and 2 times vertically, making sure not to cut all the way through. Gently spread open the slices. Mix butter and garlic together in a small bowl. Spread the garlic butter inside the cuts of the damper rolls. Arrange rolls in a pan. Fill the cuts with 3/4 of the bacon jam. Top with cheese. Bake for 15 minutes until cheese is gooey and melted.
  • Top with the rest of the bacon jam and garnish with fresh parsley and thyme. Serve right away.
