Cheesy garlic bread, the ultimate crowd-pleaser and kids' favorite, perfect for any dinner spread.
Ingredients:
  • 2 bulbs of garlic
  • extra virgin olive oil
  • 25 g Parmesan cheese
  • 1 x 125 g ball of mozzarella
  • 50 g blue cheese
  • ½ a bunch of fresh basil
  • 80 g unsalted butter (at room temperature)
  • 450 g gluten-free white bread flour plus extra for dusting
  • 2 teaspoons fast-action yeast
  • 1 teaspoon gluten-free baking powder
  • 1 tablespoon sugar
  • 1 teaspoon sea salt
  • 1 large free-range egg
  • 1 large free-range egg white
  • 1 teaspoon white wine vinegar
Instructions:
  • - Preheat the oven to 200ºC/gas 6. Cut the tops off the garlic bulbs to expose the cloves, then place them on a square of tin foil. Drizzle with 1 tablespoon of oil, wrap in foil, and bake on a tray for 45 minutes until very soft. Let cool slightly, then squeeze out the garlic. Meanwhile, prepare a 1.2 litre loaf tin with parchment. Grate the Parmesan, tear the mozzarella, crumble the Stilton, and tear the basil. Combine most of the cheese with soft butter, basil, salt, and pepper. Set aside. In a large bowl, mix flour, yeast, baking powder, sugar, and salt. In another bowl, beat the egg and egg white with vinegar. Pour over the flour mixture, stirring into a dough. Let it rest for 20 minutes. Divide into four pieces, roll into rectangles, and layer with cheesy butter and garlic. Stack the dough in a tin, let it rise for about 1 hour. Preheat the oven to 220C/gas 7. Sprinkle with remaining cheese, oil, and bake for 45 minutes until golden and bubbling. Enjoy warm on the day it's made.
