Cheesy garlic potato casserole made with hash browns, sour cream, Cheddar, and condensed soup in a crockpot.
Ingredients:
  • 1 bag (32 oz.) frozen diced potatoes
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 small onion, finely chopped
  • 2 cups shredded Cheddar cheese, divided
  • 1 cup sour cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 0.5 cup kettle-cooked potato chips
Instructions:
  • In a large bowl, mix together frozen potatoes, soup, onion, 1 cup of Cheddar cheese, sour cream, butter, garlic, salt, and pepper until well blended. Transfer the mixture to a slow cooker.
  • After setting your slow cooker on high for 3 hours, stirring occasionally, simply switch it off.
  • Top the dish with the remaining cup of Cheddar cheese, cover, and allow it to sit until the cheese melts, approximately 5 minutes. Serve in a dish and garnish with crushed potato chips.
