Cheesy slow cooker funeral potatoes with Cheddar and green onions.
Ingredients:
  • 3 tablespoons unsalted butter
  • 1 cup chopped onion
  • 1 (20 ounce) package refrigerated hash browns (such as Simply Potatoes®)
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 2 cups shredded sharp Cheddar cheese, divided
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, or more to taste
  • 0.5 teaspoon freshly ground black pepper, or more to taste
  • 1 tablespoon sliced green onions, or to taste
Instructions:
  • Prepare the slow cooker by lining it with a slow cooker liner or spraying it with cooking spray.
  • In a skillet over medium heat, melt butter and sauté onion until soft and translucent, about 5 to 6 minutes.
  • Combine onion, hash browns, mushroom soup, 1 1/2 cups Cheddar cheese, sour cream, garlic powder, salt, and pepper in the slow cooker, stirring until evenly mixed.
  • Cook on High for 2 1/2 to 3 hours until hash browns are tender. Sprinkle remaining 1/2 cup Cheddar cheese on top and continue cooking until cheese is melted, about 15 to 20 minutes. Garnish with green onions before serving.
