Start your day right with delicious low-fat filo pies.
Ingredients:
  • 125g packet 98% fat-free bacon rashers, finely chopped
  • olive oil cooking spray
  • 6 sheets filo pastry
  • 6 eggwhites, lightly whisked
  • 64.38 gm skim milk
  • 6 eggs
  • 125.00 ml 25% fat-free grated cheddar cheese mixed green salad, to serve
Instructions:
  • 1. Preheat the oven to 180C and grease a 6-hole, 1-cup capacity Texas muffin pan. 2. Heat a non-stick frying pan over medium heat, then add the bacon and cook, stirring occasionally, for 2 to 3 minutes until crispy. 3. Remove the bacon from the heat.
  • Lightly coat 1 pastry sheet with oil, then fold it in half. Give it another light coating of oil and fold it in half again. Gently press the pastry square into 1 muffin hole, folding the sides in to create a cup shape. Repeat this process with the rest of the pastry sheets and muffin holes.
  • Combine the egg whites and milk in a jug, then season with salt and pepper.
  • Divide bacon and egg white mixture evenly among pastry cases. Crack 1 egg into each. Sprinkle with cheese. Bake for 20-30 minutes until the filling is set. Season with pepper and serve with salad.
