Flaky filo swirl with bacon, egg, cheese, and caramelized onion chutney. Quick, pantry-friendly weeknight meal or elegant party dish. Store leftovers in the fridge for up to 3 days. Reheat for crispy, melt-in-your-mouth pastry perfection.
Ingredients:
  • 100g butter, melted, plus extra for greasing
  • 3 Streaky Bacon Rashers
  • 10 sheets filo pastry
  • 4 Vintage Cheddar Slices, halved
  • 135g (1/3 cup) Caramelised Onion & Balsamic Chutney
  • 3 eggs
  • 80ml (1/3 cup) milk
  • 80ml (1/3 cup) thickened cream
  • Fresh chopped chives, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease a 21cm round cake pan with a touch of melted butter.
  • Fry the bacon in a pan over medium heat for 2-3 minutes per side until slightly golden. Then, transfer to a cutting board and slice in half lengthwise and then crosswise.
  • Lay 1 pastry sheet on a clean surface. Cover the rest with dry and damp tea towels to keep them moist. Brush the pastry with melted butter. Starting from one short end, fold the filo into a 2cm wide accordion strip. Coil into a circle and place in the center of the pan. Repeat with the remaining sheets and butter, wrapping each strip around the center coil to create a large spiral, covering the base completely.
  • Layer the cheddar and bacon between the filo sheets and top with generous spoonfuls of chutney.
  • Combine the eggs, milk, and cream in a jug. Season with salt and pepper. Pour the mixture over the filo. Bake for 20-25 minutes until it turns golden and crisp.
