Indulge in a satisfying bacon and pasta casserole, topped with crispy Progresso™ bread crumbs.
Ingredients:
  • 2 large sweet onions, sliced (4 cups)
  • 1 package (16 oz) uncooked penne rigate pasta
  • 1 tablespoon butter or margarine
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Dijon mustard
  • 2 cups fat-free (skim) milk
  • 1/2 cup reduced-fat sour cream
  • 2 oz Gruyère cheese, shredded (1/2 cup)
  • 3 slices bacon, crisply cooked, crumbled
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1/4 cup chopped fresh basil leaves
Instructions:
  • Start by spraying a 12-inch nonstick skillet with cooking spray and heating it over medium heat. Add the onions and cook uncovered for 10 minutes, stirring every 3 to 4 minutes, until tender and starting to brown. Reduce the heat to medium-low and continue cooking for 35 to 40 minutes, stirring every 5 minutes, until the onions are deep golden brown. Set aside.
  • Cook the pasta as directed on the package without adding salt. Spray a 11x7-inch (2-quart) baking dish with cooking spray and transfer the cooked pasta into the dish to keep warm.
  • As the pasta cooks, prepare the cheese sauce. Melt butter in a 3-quart saucepan over medium heat. Using a wire whisk, blend in flour, salt, pepper, and mustard. Cook for about 2 minutes, stirring continuously until the mixture is smooth and bubbly, then remove from heat. Slowly pour in milk and bring to a boil while stirring constantly; let it boil and stir for 1 minute. Take it off the heat and mix in caramelized onions along with all the remaining cheese sauce ingredients.
  • Preheat the oven to 400°F. Pour the decadent cheese sauce over the pasta in the baking dish. Sprinkle with the delightful topping ingredients. Bake without a cover for about 10 minutes or until thoroughly heated (the topping will remain golden).
