Lighten up potato salad by mixing tzatziki, bacon, tarragon, and caramelized onion with red potatoes for a flavorful twist.
Ingredients:
  • 30 small small potatoes, or more as needed
  • 1 large red onion, sliced into 1/8-inch pieces
  • 1 teaspoon dried tarragon
  • 3 fluid ounces white wine
  • 4 slices bacon, cut into 1/2-inch pieces
  • 0.5 cup tzatziki sauce, or more to taste
  • 5 tablespoons chopped fresh chives
Instructions:
  • In a large pot, cook potatoes in salted water until tender. Drain, cool, and then cut in half.
  • In a skillet over medium heat, sauté onions until soft and golden brown, about 20 minutes. Stir in tarragon and deglaze the pan with white wine. Let it simmer until the wine evaporates, for about 2 to 3 minutes.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Remove and drain the bacon slices on paper towels.
  • Combine the potatoes, onion, and bacon in a large bowl. Gently stir in the tzatziki sauce, chives, salt, and black pepper until well mixed.
