Ingredients:
  • 1 onion, diced
  • 3 pounds potatoes
  • 1 pound bacon, cubed
  • 2 cups white sugar
  • 2 cups white wine vinegar
Instructions:
  • 1. Boil a large pot of well-salted water. Cook potatoes until tender yet firm, approximately 15 minutes. Drain, allow to cool, and then chop into pieces.
  • In a large, deep skillet, sizzle bacon and onion over medium heat until bacon is beautifully browned. Remove any extra grease from the skillet.
  • Combine the sugar and vinegar with the bacon and onions, bringing to a boil. Pour this flavorful mixture over the potatoes and stir well.
