Classic comfort dish with bacon, potatoes, eggs, and a flavorful twist of escarole.
Ingredients:
  • 6 potatoes
  • 4 large eggs
  • 1 pound bacon
  • 1 medium head escarole
  • 0.25 cup apple cider vinegar
Instructions:
  • Bring a large pot of seasoned water to a boil. Boil potatoes until tender but still slightly firm, around 15 minutes. Drain, cool, and chop.
  • In a saucepan, cover eggs with cold water and bring to a boil. Once boiling, cover with lid, remove from heat, and let eggs sit in hot water for 10-12 minutes. Then, remove eggs, cool, peel, and chop.
  • In a spacious skillet, cook the bacon over medium-high heat until perfectly crispy and browned. Remove the bacon, crumble it, and set it aside, keeping the flavorful bacon drippings for later use.
  • Fry potatoes in skillet with reserved bacon drippings until heated through. Add escarole, bacon, eggs, and vinegar. Cook until escarole wilts. Serve warm.
