Ingredients:
  • 1 1/3 lb medium red potatoes (about 5)
  • 3 slices bacon, cut in 1-inch pieces
  • 1/2 cup chopped onion
  • 1 tablespoon sugar
  • 1 teaspoon Gold Medal™ All-Purpose Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1/4 cup cider vinegar
Instructions:
  • 1. In a 3-quart saucepan, cover the potatoes with water and bring to a boil. Simmer on low, covered, for 30 to 35 minutes until tender. Drain and cool slightly before cutting into 3/4-inch dice.
  • In a 10-inch skillet, crisp bacon over medium heat for 7 to 8 minutes, stirring occasionally. Remove bacon with a slotted spoon and drain on paper towels.
  • In a skillet over medium heat, sauté onion in the delicious bacon fat for 3 to 5 minutes until tender. Add sugar, flour, salt, celery seed, and pepper, then stir constantly and cook for 1 more minute.
  • Combine water and vinegar with onion mixture, then bring to a boil over high heat, stirring constantly. Continue boiling and stirring for 2 to 3 minutes until thickened.
  • Lower the heat to medium and stir in the potatoes. Continue cooking, gently stirring to coat the potatoes, until they are hot and bubbling. Sprinkle with bacon and serve warm.
