Loaded cheesy mash with bacon and caramelised onion recipe

Elevate your mashed potatoes with our decadent loaded cheesy mash topped with savory bacon and caramelized onions.
Ingredients:
  • 800g Sebago potatoes, peeled, roughly chopped
  • 60g butter, chopped
  • 84.98 gm milk, warmed (see note)
  • 250.00 ml grated cheddar
  • 36.40 gm extra virgin olive oil
  • 2 rashers Made Thin Sliced Streaky Bacon
  • 2 brown onions, halved, thinly sliced
  • 59.40 gm brown sugar
  • 20.00 ml finely chopped fresh at-leaf parsley
Instructions:
  • 1. Start by cooking the potato in a large saucepan filled with cold water until very tender, which should take about 15 minutes. 2. Drain the potato well and return it to the saucepan over low heat to evaporate any remaining water, gently shaking the pan for 1 to 2 minutes. 3. Mash the potato until smooth using a potato masher. 4. Mix in the butter, warm milk, and half of the cheese, beating with a wooden spoon until fluffy. 5. Season the mashed potatoes with salt and pepper to taste.
  • Heat half of the oil in a frying pan over medium-high heat. Cook bacon for 3 to 4 minutes until crisp. Transfer bacon to paper towels to drain. Reduce heat to medium-low, then add the remaining oil to the pan along with onion and garlic. Cook for 10 minutes until onion is softened. Add sugar and vinegar, stirring until sugar dissolves and mixture caramelizes. Finally, mix in 3/4 of the cooked bacon.
  • Transfer the creamy mashed potatoes to a serving dish. Sprinkle the golden caramelised onions and the rest of the cheese over the top. Finish it off with a sprinkle of the remaining crispy bacon and fresh parsley. Serve and enjoy!
