Irresistible mini egg mayo sandwiches, a sure crowd pleaser!
Ingredients:
  • 3 eggs
  • 61.88 gm good-quality mayonnaise
  • 2.95 gm Dijon mustard
  • 20.00 ml chopped fresh chives
  • 20.00 ml chopped flat-leaf parsley
  • 4 thick slices wholemeal bread
  • Mustard cress or alfalfa sprouts, to garnish
Instructions:
  • 1. Gently simmer eggs in cold water for 5 minutes, then cool, peel, and mash in a bowl with mayonnaise, mustard, herbs, salt, and pepper.
  • Spread the luscious egg mixture generously over the bread slices, delicately remove the crusts, and artfully cut the bread into delightful fingers. Finish with a garnish of fresh cress or vibrant alfalfa.
