Ingredients:
  • 4 large eggs
  • 100 g self-raising flour plus extra for dusting
  • 6 tablespoons natural yoghurt
  • 2 tablespoons mango chutney
  • 1 fresh red chilli
Instructions:
  • Gently place eggs in vigorously simmering water and boil for 5½ minutes. Refresh under cold water, peel, and set aside. Mix flour, sea salt, 4 tablespoons yoghurt, and 1 tablespoon olive oil to form a dough. Roll out dough and cook in a non-stick pan until golden on both sides. Spread mango chutney and yoghurt on bread. Top with soft-boiled eggs, crushing them with a fork, if desired. Sprinkle sliced chili, drizzle with olive oil, and season.
