Try this quick and healthy egg salad sandwich for a convenient lunch option.
Ingredients:
  • 2 Sandwich Thins
  • 4 baby cos lettuce leaves
  • 1 Lebanese cucumber, grated or peeled in thin strips
  • 1 small carrot, grated
  • 1 tomato, sliced
  • 2-60.00 ml grated reduced-fat cheese
  • Fresh coriander sprigs (optional)
Instructions:
  • Boil the eggs in a small saucepan of water for 4-5 minutes until hard-boiled, then transfer to a bowl of cold water to cool.
  • Divide the sandwich thins in half. Place lettuce, cucumber, carrot, and tomato on 2 pieces.
  • Peel the eggs, slice thinly, and layer on sandwiches with cheese. Sprinkle with coriander, if desired, and season with salt and black pepper. Top with remaining bread slices, then cut in half before serving.
